Back in February, Campbell Elementary Middle School introduced a new Hydroponic Learning Lab as part of their YSU After School Program. Over the past two weeks, their plants have been harvested and the students in the program have enjoyed several snacks as a result of their hard work.
“We have harvested our lettuce, kale and swiss chard several times already, as well as basil,” said YSU Site Coordinator Amy Klingensmith. “The cafeteria staff helped us by cooking kale chips using the kale we harvested for the students to have as an afternoon snack.”
Even though several harvests have been done, the plants are continuing to grow. The students also brought home some of their vegetables, and enough lettuce was harvested to share with the Campbell teachers in the building. Klingensmith also said, they made fresh salads using the lettuce, kale and swiss chard the students harvested.
